I have friends who make lunch for themselves every day to bring to work. One of the gals at the office gets up pretty much every morning and cooks specifically for her lunch. She'll cook a chicken breast to add to an organic mixed greens salad. Or grill a piece of salmon and pair it with steamed green beans and rice.
That is way too ambitious for me. If I can swing left-overs, that is great. But mostly I try to keep stocked up on single serving frozen meals to grab-and-go in the mornings. Often I don't even manage to remember to grab one, and then I end up buying something (generally less healthy) at the cafeteria. Not really a good scene for either my wallet or my health.
I look at the flyers every week to check out the sales, so I see who might have my favourite lunch options on special. I try to find brands that offer good nutrition, low fat, sensible calories, plus great taste and enough bulk to keep me full through the afternoon.
VH Steamers are a new find for me. Asian-inspired frozen meals in six varieties. The technology behind the steamers is explained here. The most important points for me are that steaming is an efficient cooking method that locks in flavour and protects texture.

But just 3 1/2 to 4 1/2 minutes is all it takes to heat up this healthy lunch. The VH Steamers Kung Pao Chicken has just 300 calories and 6g of fat, plus 3g of fibre, 17g of protein, and 30% of your daily Vitamin C needs. It packs a pretty good nutritious punch for a convenience meal. The whole grain brown rice helps to fill you up and keep you going through the afternoon.
The steam basket keeps the chicken and veggies up out of the sauce while cooking. See the nice chunks of meat?
I am lucky enough to have a water cooler in my office, so I am pretty good at meeting my daily water quota. It's nice to have fresh cold water at hand to go with lunch. And I like to add a little treat to brighten my day. The creme caramel Jell-O Mousse have just 60 calories each, so they are a nice sweet treat without much guilt. I can grab a really quick bite at my desk, and feel pretty good about staying on track with my health goals and my work to-do list.
