Re-Inventing the Sandwich with Dempsters #SandwichIt

I have a pet peeve - waste. Of any kind really, but particularly of food. I am sure this has a lot to do with my late grandmother's influence. Her generation, having lived through the Great Depression, became the ultimate green generation. They had a re-use for almost everything! We drew on the cardboard that came in my grandfather's shirts. Ice cream buckets became flower pots. And leftovers were transformed into new meals. Extra potatoes from lunch became potato salad at dinner. Chicken and turkey became delicious homemade soups. And anything that didn't make it back to our table, became a meal for our dog.

I have two modes when preparing my family's meals - some meals are designed and measured to be eaten fully at one sitting, while others are specifically planned with leftovers in mind. And certain meals really lend themselves to reinvention as tomorrow's lunch for school or office, especially as sandwich fillings. Leftovers can make for a refreshing change from the standard cold cuts or peanut butter and jelly, you know.

I'm going to share with you a little creation I came up with to use up leftover chicken burgers. These are actually a rare occurrence at our place, but sometimes the Teen surprises us with a smaller than usual appetite. Generally due to illicit after school snacking. But now that I've found this yummy sandwich, I expect to be throwing an extra patty or two on the grill on BBQ nights.

Grilled Southwest Chicken Salad Sandwich

1 BBQed Chicken Burger Patty
1 slice onion
2 Tbsp Mayonnaise
2 Tbsp Tomato Salsa (preferably a smoky chipotle salsa)
1 slice Avocado
Iceberg lettuce
2 slices Dempster's original White Bread, toasted

Coarsely chop the chicken burger patty and onion. Place in a bowl and mix in mayonnaise and salsa. Chill while toasting the bread.
Place avocado on one slice of toast, top with chicken salad mixture, then the lettuce. Finish with the second slice of toast, slice and enjoy!

Hearty, flavourful, filling, all while avoiding waste!
Dempster's has a number of sandwich recipes on their website for you to try. And of course you can always come up with your own creations, based on what you find in your fridge, like I did. The sandwich is a truly flexible vehicle, and so many leftovers can find their delicious way between two slices of bread.
