Rhubarb Gin Fizz #Recipe #Cocktail

This summer I have a new signature drink. I'm calling it a Rhubarb Gin Fizz. It is sweet, light, and refreshing, and perhaps a little too easy to drink. This one uses both mint and rhubarb from my own garden, so that makes it extra special for me. I love serving up the fruits of my labours, plus it doesn't get any fresher!.

Rhubarb Gin Fizz

3 oz Bombay Sapphire Gin
6 oz Rhubarb Simple Syrup*
4 pieces of rhubarb stem, about 1/2 inch each
4 mint leaves
Soda water to top
additional mint for garnish

Muddle the rhubarb pieces and mint leaves in a cocktail shaker.  Add ice, gin, and rhubarb simple syrup. Shake until the shaker is too cold to handle. Strain over ice into two generous glasses, top up with soda. Garnish with mint.


*Rhubarb Syrup
4 cups rhubarb, cut in 1/2 inch pieces
4 cups water
3 cups sugar

Bring to a boil, then reduce heat to low and simmer for about 25 minutes, until rhubarb is disintegrated.
Pour through a fine mesh strainer to collect the juice
You can save the rhubarb pulp for baking or to use as a topping on ice cream, etc.
